Coconut Roll-Out Cookies

Most coconut flour cookies taste like cardboard to me, so I felt reluctant to create a recipe for one! Yet, after being asked to do so more then once by people healing on Body Ecology Diet (B.E.D.) I decided to give a go. I am both pleased and surprised with how they turned out; they roll like a dream and are as moist as I could get without dough falling apart. I hope you enjoy this versatile cookie if you avoid refined sugar, gluten, and yeast. This cookie includes eggs. Can’t eat eggs? Try egg-free almond cookies.
Vegetable glycerin sweetens this cookie as this kind of sweetener does not feed harmful yeast, bacteria, or viruses (i.e., Candida, GBS+) that are living in the body. This sugar substitute is also safe for diabetics because glycerin does not influence blood sugar or insulin release.

We each differ in how we choose to step in and ride a healing diet like B.E.D. If you are are currently on stage 1 and taking this way of eating seriously (focusing on bullseye to heal yourself with every meal) then best to hold off on making this recipe unless you culture the coconut milk and flour first (see below for how I culture coconut milk and flour).
Roll-Out Coconut Cookies
Prep time: 15 min // Cook time: 5-10 min
Makes: 1 dozen
Ingredients
- 1 cup coconut flour*
- 3 eggs
- 3 Tbsp coconut milk (or another milk)*
- 1/2 tsp sea salt
- 1/3 cup ghee or coconut oil, melted
- 1/4 cup vegetable glycerin
- 1 tsp vanilla or almond extract (alcohol-free)
Method
- Combine coconut flour, coconut milk, eggs and salt.
- Mix oil, sweetener and almond extract in a small bowl.
- Mix wet and dry ingredients.
- Place dough in fridge for 1 hour.
- Roll dough between 2 pieces of wax paper until 1/4-inch thick.
- Remove top piece of wax paper and sprinkle dough with coconut flour if sticky in any one spot.
- Cut cookies into shapes.
- Place shapes on parchment-lined cookie sheet with metal spatula.
- Bake at 350 degrees until edges are light brown, 8-12 minutes.
- Cool before handling or they break easily.
Tips & Tricks
- Use ghee or cultured butter instead of coconut oil.
- I never tried to substitute another thick milk for coconut milk.
- You can swap 1/4 cup honey for the glycerin, unless on B.E.D.
- This is a friendly recipe for those on a Paleo, B.E.D*, or GAPS.
- Another cookie recipe while healing is almond roll outs (egg-free)
- This recipe is easy-to-digest and combine well with animal protein.
- Frost with flax frosting or basic frosting (gluten/dairy/sugar-free).
*If you’re on the early stage of Body Ecology Diet, you may want to culture the coconut flour and milk to introduce enzymes and probiotics. This extra step makes them easier to digest. If you skip this step then best to enjoy as an occasional/transitional treat.

Technically, no it would not be as coconut manna is pureed mature coconut and unless fermented would not be allowed on stage 1 of B.E.D. Straight up coconut oil is fine though. That said, a serving size of manna contains just 1 gram of sugar so unless your kids have a hard time digesting fat I would give it a go and limit intake; watching for symptoms of skin rashes, etc. When my kids were on the initial stage of the diet, I created almond hearts which are yummy sort of fat bomb made with coconut oil 🙂 Recipe at https://www.happybellies.net/the-digestive-system/almond-hearts-body-ecology-diet/
Is coconut manna/butter allowed on stage 1? £ was go to make fat bombs for my kids.
Hi Ashlee, this recipe uses a liquid glycerin only. I am sure you can use lakanto though you might need to fix the dry to wet ratios if you do. Let us know if you play with things 🙂
