These cookies are perfect for anyone on The Body Ecology Diet (B.E.D). My kids love them and I like that the dough doesn’t make a sticky mess on the counter when rolling out. Not bad for a cookie without eggs, dairy, or grain 😉

Basic White Frosting (dairy/sugar/gluten free)

This basic white frosting is easy to make and goes on smooth to top any cake or cookie. I have made this recipe many times for my boys’ birthday gatherings and is a good enough dairy, sugar, and gluten free topping.
We are all different in how we step into and ride a particular dietary practice, like B.E.D. and that said, if you are taking stage 1 seriously and focusing in on that bullseye of a target the deeper in you go, then I would hold off on this recipe unless you culture the coconut milk and flour. This is quite possibly the most earthy and simple way to top carrot cupcakes, waffles, and even fill a layered cake. When you’re on a diet like B.E.D, recipes like this start to make sense and even taste good!
Kids, and adults, who haven’t grown up on sugar will appreciate this frosting’s subtle sweetness.
I use lakanto here because it’s a sweetener that doesn’t feed harmful yeast or bacteria in the body. Making it a great sugar substitute for anyone with yeast or bacterial issues. Diabetics too, because lakanto doesn’t influence blood sugar or insulin release.
