Dandy The Lion: A Vegetable Green Smoothie ?

My husband nicknamed this one and I think it is appropriate given that the French origin of the word dandelion – dent-de-lioun – means “tooth of the lion” due to the plant’s sharply indented leaves. This fierce little smoothie contains a handful of dandelion greens, if you want more of a kick, add more leaves.  

Our home resides in a community with an Earthship greenhouse and while up there yesterday, I spotted a patch of dandelion greens and thought to myself “why not?”. I love adding greens to my morning smoothies … watercress, parsley, cilantro … and given that we are in the month of April, I figure this is as good a time as any to create a delicious spring beverage for us all to enjoy.

Body Ecology Diet (B.E.D) is a way of eating designed by Donna Gates to address yeast, bacterial, and viral overgrowth in body. The purpose of this diet is to boost immunity by alkalizing blood and restoring the inner ecosystem to naturally support the body in being a self-healing organism.

The goal is not to eradicate yeast, bacteria, or viruses; that is impossible and less than ideal. Instead, the focus is on restoring body strength, so all parts are coming together and working in harmony. A true symphony!

This recipe for young green coconut kefir (yck) gives the option of using fresh or store-bought young coconut juice.

Kefir means ‘feel good’ and how most feel drinking young coconut kefir …. this probiotic food contains raw Thai young green coconuts and high-quality kefir starter*. Mix these together, culture in a warm spot, and wait to enjoy a probiotic drink full of enzymes and vitamins 🙂

When you’re on The Body Ecology Diet (B.E.D.) or other gut healing protocol, travel can be challenging. It’s hard to be away from your kitchen comfort zone. The world can feel too big and food choices too slim.

Food seems to be everywhere, except in your mouth, because you can’t eat most of what is available … coffee brewing, fries frying, and pizza baking can be unbearable; it’s hard to say no on the go.

Benefits of Young Coconut Kefir & Pudding

Young green coconut kefir is made from the lightly sweet ‘water’ found inside a Thai baby coconut. You can also make a coconut pudding from the tender meat found in a Thai baby coconut. I have found best success with making both with Body Ecology’s starter*. 

The kefir and the pudding are digestive aids that are rich in magnesium, calcium, essential fatty acids, and beneficial flora (aka probiotics). They are also much cheaper, and effective, than a probiotic supplement

Coconut kefir and pudding cleanses the endocrine system (adrenals, thyroid, pituitary, ovaries). Many women find their menstrual period becomes more clean and healthy after eating these unsalted cultured foods. If you’re prone to pms, you might find that goes away. If you’re experiencing early menopause, you may find your monthly cleansing return again. Breast-milk can become more probiotic-rich with the addition of these foods!

Digestive Issues

When the gut is inflamed or permeable (leaky gut), as is often the case with digestive issues like IBS, Crohn’s, or gluten intolerance then young green coconut kefir and pudding can help because they have anti-inflammatory and cooling properties. These foods soothe and repair the digestive lining.

Yeast Infections

Coconut kefir and pudding are alkalizing and anti-fungal in nature. They are ideal for anyone with a yeast or bacterial infection (i.e. Candida, GBS+) because they keep the gut environment in a correct pH which make pathogenic yeast, like Candida Albicans and Group B Strep bacterium die-off and give good flora an opportunity to thrive again.     

*This is my favorite kefir starter to make both the yck and pudding (recipes below). This starter contains potent strains of probiotics that have been shown to survive the long journey from mouth to gut; where they remain intact, wake up, and keep us strong and healthy in so many ways. Most probiotics get destroyed by antibiotics, fluoride, stomach acid, and chlorinated water before they even reach the gut.
