These cookies are perfect for anyone on The Body Ecology Diet (B.E.D). My kids love them and I like that the dough doesn’t make a sticky mess on the counter when rolling out. Not bad for a cookie without eggs, dairy, or grain 😉

A Treat Box is basically a Tupperware container filled with non-perishable treats. This box can be kept at school, day-care, summer camp, even a best friend’s home and offered to your child whenever there is a food item that he or she can’t eat (i.e. gluten, dairy) or that you don’t want him or her to eat (i.e. sugar, artificial dye).

I made pumpkin pie for my son’s 10th birthday party and our 25 friends that came to celebrate him. In true ‘Tara style’, I made five different pies to experiment with; all from different recipes and came up with a couple recipes of my own that are not only ‘body ecology friendly’ but perfectly suitable for any body with any eating style.
This pie is delicate with enough richness to satisfy most any sweet tooth. As with most of my recipes, this is free of refined sugar and common allergens; except nuts, and is especially made for those who practice The Body Ecology Diet (B.E.D.); you’ll find this to be stage 2 friendly as an occasional treat. Most coconut flour cookies taste like cardboard and so I was reluctant to create a recipe for one. Yet one day I did and am pleasantly surprised at how they turned out …. they roll out like a dream and are as moist as I could get without the dough falling apart.
